Miso, an ingredient of miso soup, has a long history in Japan, dating back to the Asuka period (710-794). However, at that time, miso was not soluble in water, and people ate it by licking it off. It was not until the Kamakura period (1185-1333) that people began to eat miso soup regularly, as the "Ichiju-ichisai" (One soup and One Vegetable) meal style became popular in samurai society. From then on, miso soup became a staple of the Japanese diet.
The natural brewing process used at our Yatsugatake Natural Brewery is key to the development of the miso's unique flavors. Located at an altitude of approximately 850m, the brewery uses subterranean water from nearly 90 m underground, which has been slowly matured over a long period. This brings out a mellow and deep flavor to the naturally brewed Shinshu Miso.
The process of making rice miso involves boiling, steaming, and pressure cooking the soybeans, followed by the steaming of rice to create rice malt (koji). The soybeans, rice malt, water, and salt are then mixed and fermented and aged for an extended period in the brewery's ideal, cooler mountain environment.
At YAMASAN, we are committed to using only the finest Japanese ingredients, including Koshihikari rice from Akita prefecture, which is renowned both domestically and internationally. This attention to quality raw materials is essential for creating the rich, full-bodied flavor of our miso.
While miso is primarily used as an ingredient in miso soup, it can also be used as a seasoning in a wide variety of dishes. One example is Twice-cooked Pork with Miso, a nutritious recipe that combines vegetables and meat with the complex, probiotic-rich flavor of our Shinshu Miso.
Our Shinshu Miso is characterized by its shiny light color, refreshing strong taste, and rich aroma, which are the result of the natural fermentation process and the action of yeast and lactic acid bacteria. The traditional natural brewing method, which has been used to make miso for over a thousand years, allows the flavor to develop fully, with the long maturation period in the cool mountain environment contributing to the depth and richness of the final product.
